Potato Corn Chowder

There’s really no story behind this other than I was craving something creamy and warm, and with corn. I found some potatoes and other ingredients I had in the fridge and this came out so delicious! So. Freaking. Good. I had it out on the stove for my roommates to grab and it was gone instantaneously! It’s a good thing this is delicious, because I had to make it three more times to recreate the recipe. Literally the first time I was making this was throwing in whatever I had at the moment, so getting the proportions right took some more tries.

I paired this with some scallions and garlic bread (not pictured), and I’m obsessed. It also doesn’t contain a lot of heavy cream than I thought chowders needed to have to get the texture. A majority of this chowder is potatoes and water! Even better - I used homemade vegan bouillon powder!!! You can easily make this chowder vegan by subbing out the half & half with non-dairy milk, and butter with olive oil. I’m sharing the recipe if anyone wants to make it as well. You can find below!
