It’s creamy, it’s warming, and it’s vegan! I love Indian curry so much because I love anything creamy. A small problem of that is that most creamy dishes are made from heavy creams and cheese. But, I realized that Indian curries do not contain that much cream, if any -- it’s mostly either coconut milk or yogurt. Health all around!
I have made chicken tikka masala before that tastes just as good as the ones from a restaurant, but I wanted to try it with tofu this time. And it’s so delicious!!! IG: nora_cooks_vegan_ knows how to make delicious food. It tastes just as good and it’s really easy to make. I’m still in shock that I don’t need creams to get the creamy texture I crave almost all the time, but maybe some of you guys already knew that!
This is a great idea for meal prepping because you can throw together the rice, curry, and a veggie (not shown - I used broccoli) on a plate, heat it up, and you’re good to go :)
