Congee w. Dried Scallops
My mom would always make us congee after we ate very rich and heavy foods several days in a row. She always says that it’s time for some congee now to calm down our system. It may be a habit, but after so much holiday foods (ok more like kbbq every single day after I got a new electric skillet), I started to crave some congee.
What does it actually do? Isn’t it just white rice? Turns out, congee supports good health and promotes good digestion. To me that means giving my stomach a break from the heavy foods I’ve been eating.
I need to look into this more, but there’s actually so many ways to serve congee. Here, I used dried scallops. I couldn’t find a recipe I liked, so I made my own and it is SO good!
